Easy Grilled Tuna Recipe


Easy Grilled Tuna
Are you looking for something healthy? Or Something you can cook for one person? Try this quick and easy grilled tuna. The tuna pictured was purchased for $1 at the Dollar Tree for one steak. Just defrost it and serve with a nice healthy vegetable side.

Ingredients:
Southern Seasoning
Tuna steak with skin on
1 tsp butter
Aluminum foil thick grade

Place tuna skin side down on the aluminum foil. Tear a big enough piece of foil to make a pouch. Season the steak on one side. Dab 1 tsp of butter on the tuna. Seal the edges of the foil by rolling it up. Place between a wire mesh or put directly on the grill on medium high flame. Cook skin side down for 5 minutes. Pouch will expand but should not tear. Flip over and lower the heat just a little and cook for 4 minutes. Carefully take off and unroll. Serves 1

Pan Grilled Feta Eggplant Recipe

It's eggplant season here in central Louisiana.  Eggplants bought from the local farmers market allows for fresh and nutritious vegetable options.  Here is a yummy recipe my mother loves to make for us.  It is so quick and delicious you will add it to your next menu!

 

 

Pan Grilled Feta Eggplant


Ingredients:

Eggplant cut in 3/4" round slices
Olive oil
Feta cheese
Southern seasoning

Cut eggplant into 3/4" round slices with the peelings on. Heat a black iron skillet on medium with a dash of olive oil. Then season your eggplant with southern seasoning and brown on each side till desired doneness. When done sprinkle as little or as much feta cheese you desire and serve.
